Tribute to Eileen McCoy (By: Elsa Gibbs and Denise Campbell)
The Servite community is deeply saddened by the death of Eileen McCoy--our friend, colleague, teacher, coach and mentor. Eileen had a way of making every single one of us-- colleague or student--feel that we held a very special place in her life. She was cheerful, selfless, generous, strong, and a true lady. Knowing and loving her made us “more” than we were before we met her. Her passion for teaching, dedication, and support of her students was evident in her 16 years at Servite.
(One of her previous students, Chris Galippo wrote, "Wow, can't even express how sad I am to hear
that Ms. McCoy has passed away. Easily the sweetest, most amazing teacher I ever had. She was the best! It was always about more than school to her. She genuinely cared about every one of us. She's up in heaven cracking jokes with Fr. Ed.”)
Her legacy at Servite is undeniable. She will not be forgotten, she will live on in our hearts.
Rest in peace, dear friend.
